Ube Spiced Granola (Vegan)

You guys, this is a great granola recipe. I say that because I’ve gone through many iterations, trying to make granola that has both great flavor and crunch. THIS IS IT!

Originally, this recipe was pumpkin spice granola during the fall, and I was selling the granola to my friends and family. Since ube flavor is right up the same alley as pumpkins and sweet potatoes, I decided to “Filipino-nize” my original recipe.

Trust me, it’s delicious. Not only is it delicious, it has the option to be GLUTEN-FREE and VEGAN! Watch the video above to find out how to make the perfect ube granola recipe at home!

Ingredients:

3 cups rolled oats (not steel cut or instant oats!)
2 cups puffed rice
1/2 cup sliced almonds
1/2 cup coconut flakes
1/2 cup ube (purple yam), boiled and pureed
1/2 cup sweetener (agave syrup, maple syrup, or honey)
2 tbsp avocado oil, coconut oil, or olive oil
2 tsp ube extract
1 tbsp + 1 tsp pumpkin spice blend
1/2 cup dried cranberries

Pumpkin Spice Mix Recipe:
3 tbsp cinnamon
2 tsp ground ginger
2 tsp ground nutmeg
1 1/2 tsp allspice
1 1/2 tsp ground cloves

Directions:

In a large bowl, mix the oats, puffed rice, sliced almonds, and coconut flakes.

In a separate bowl, mix the pureed ube, sweetener, avocado oil, ube extract, and pumpkin spice blend.

Combine the dried ingredients and liquid ingredients together, and mix well until everything is incorporated.

On a parchment paper-lined baking tray, lay out the granola evenly to ensure an uniform bake throughout.

Bake in the oven at 350ºF for 30-35 min on one side, then flip and bake for another 30-35 minutes,

Allow the granola to fully cool down for about 30 minutes. Add the dried cranberries, and store in an airtight container.
