Chicken Sotanghon Recipe in Instant Pot

also referred to as "Chicken Long Rice" in Hawaii

Sotanghon is similar to "chicken noodle soup", but way more delicious and comforting in my opinion!

We take bean thread noodles and place them in a chicken soup simmered in ginger, garlic, fish sauce, and more. MMM!

In Hawaii, they refer to this as "Chicken Long Rice". Doug's family is from Hawaii, and he's constantly asking me to make him sotanghon because it's one of his ultimate comfort foods as well!

Oh, and we'll be doing this in the Instant Pot...just because 🤷🏻‍♀️

Ingredients:

Bean thread noodles
1 tbsp oil
2 garlic cloves, chopped
½ onion, chopped
2-inch knob of ginger, sliced thinly
1 ½ lbs chicken thighs
Salt
Freshly ground pepper
2 tbsp fish sauce
2 cups chopped cabbage
4 cups of water
4 packets of chicken flavoring (~4 cups chicken broth)
1 ½ cup chopped green onions

Directions:

Soak the noodles in hot water.

Put the Instant Pot on Saute mode, Normal level. Pour in a tablespoon of oil, the garlic, onions, and ginger. Stir until the onions become translucent.

Pour in the chicken and saute the chicken until it’s browned on both sides, about 3-5 minutes. Season the chicken with a dash of salt, ground pepper, and fish sauce.

You can essentially add any vegetables you want, but I use chopped cabbage. Add the chopped cabbage, then pour in the 4 cups of water.

Add in 4 packets of chicken flavoring. Mix well to integrate the flavor.

Drain the water from the soaked noodles, and dump the noodles into the pot. You can adjust the amount of noodles you'd like in this recipe.

Press the Cancel button to turn off the pot. Add some green onions in the soup, and reserve the rest for garnish.

Special Notes:

You can add more veggies in here if you'd like, such as carrots, green beans, and more.

Some like to serve sotanghon over rice as well. Extra carbs, extra comfort!
