Chia Seed Puddings (Vegan)

Chia seed pudding is something I adopted from my previous co-worker. It’s totally NOT a Filipino-influenced snack, but I always manage to “tropicalize” these kinds of recipes anyway ;)

I created this recipe as inspiration for a mango tapioca dessert I found on one of the Filipino food blogs. I wanted to make it with tapioca balls, but I RAN OUT in my pantry! What I did have was a big ol’ bag of chia seeds, which is similar enough to replicated the texture.

The beauty of this chia seed recipe is that you change it to any other flavor you want! Eat the chia seed pudding on its own, on top of yogurt, in your oatmeal, and more.


Mango Coconut Chia Seed Pudding:
1/4 cup chia seeds
1 cup coconut milk
1/2 tsp vanilla extract
1 tbsp maple syrup
1 mango

Ube Coconut Chia Seed Pudding
1/4 cup chia seeds
1 cup coconut milk or almond milk
1/2 tsp ube extract
1 tbsp maple syrup
1/4 cup coconut flakes

Cacao Chia Seed Pudding:
1/4 cup chia seeds
1 cup coconut milk or almond milk
2 tbsp maple syrup
1/4 cup cacao powder


This recipe is easy - mix all the ingredients together based on the chia seed pudding recipe you want.

Allow the chia seed pudding to sit in the fridge for at least 2 hours or overnight to allow the chia seeds to absorb all the liquid.


Special Notes:

Make your own! Some other ideas include canned or frozen fruit and almond or pandan extracts!
