It's hard to describe the taste of pandan, but these cookies deliver a pleasant surprise from the first bite. These pandan coconut cookies are soft, chewy, and have the perfect amount of sweetness.


Pandan is a plant, and its essence is typically used in many Southeast Asian desserts. In the Philippines, we typically use it in our desserts or simmer it in the rice cooker for a bright, floral flavor.


I make these cookies with much less sugar compared to other cookies out there, which makes them EVEN TASTIER!


Choose if you like: bright flavors like jasmine, vanilla, and mellow coconut flavors.


Ingredients: all-purpose flour, butter, granulated sugar, eggs, unsweetened coconut flakes, baking powder, pandan extract, baking soda, salt
