Ube Mochi Pancakes Recipe (Trader Joe's Alternative)

Purple Yam-Flavored Mochi Pancakes

** In the video I accidentally said "1 tsp baking soda" but it should only be 1/2 tsp" - no biggie! AHHH TRADER JOE'S RELEASED AN UBE MOCHI PANCAKE MIX!!! AHH!!! I absolutely love Trader Joe's, but I want you to know that you can make this at home, especially if you already have glutinous rice (aka sweet rice flour, or mochiko flour). The Trader Joe's mix is gluten-free, and you can convert my recipe to a gluten-free ube mochi pancake by substituting the all-purpose flour for normal rice flour. The best part is, you can change the flavor of these ube mochi pancakes to be...pandan mochi pancakes, vanilla mochi pancakes, or WHATEVER flavor you want them to be! Oh wait...the BEST best part is that making this at home is a fraction of the cost compared to buying the mix at Trader Joe's. Place this batter in a waffle iron to turn these into ube mochi waffles!


Ingredients: • 1/2 cup + 2 tbsp all-purpose flour • 1/2 cup + 2 tbsp glutinous rice flour (aka sweet rice flour, or mochiko flour) • 1 tsp baking powder • 1/2 tsp baking soda • 1 tsp cinnamon • pinch of salt • 2 tbsp butter, room temperature, plus extra for cooking • 2 tbsp sugar • 1 large egg • 1 tsp ube extract • 1/2 cup coconut milk • 1/2 cup water


Directions: 1. In a large bowl, combine all-purpose flour, glutinous rice flour, baking powder, baking soda, pinch of salt, and cinnamon. Whisk it all together and set aside. 2. In a separate bowl, beat together the butter and sugar until the sugar integrates fully into the butter. 3. Add one large egg and ube extract, then whisk well. Add the coconut milk and water and mix until fully combined. 4. Pour the liquid ingredients into the dry ingredients, and whisk together until smooth. The batter shouldn’t be too liquidy nor too thick (check the video for good consistency). Put more liquid if too thick, or a bit more equal parts flour and glutinous rice flour if it’s too liquidy. 5. Heat up a skillet or nonstick pan over medium-low heat, and add a sliver of butter. Once the pan is preheated, pour in your ube mochi pancake batter. 6. Wait for the edges of the pancake to dry out a bit, or wait for some holes from the bubbles popping. Once you see these, flip the pancake over. 7. Continue cooking until you've run out of batter!
