Chia seed pudding is something I adopted from my previous co-worker. It’s totally NOT a Filipino-influenced snack, but I always manage to “tropicalize” these kinds of recipes anyway 😉

I created this recipe as inspiration for a mango tapioca dessert I found on one of the Filipino food blogs. I wanted to make it with tapioca balls, but I RAN OUT in my pantry! What I did have was a big ol’ bag of chia seeds, which is similar enough to replicated the texture.

The beauty of this chia seed recipe is that you change it to any other flavor you want! Eat the chia seed pudding on its own, on top of yogurt, in your oatmeal, and more.

INGREDIENTS:

Mango Coconut

1 cup coconut milk

1/4 cup chia seeds

1/2 tsp vanilla extract

1-2 tbsp maple syrup

1/2 diced mango

Ube Coconut

1 cup almond milk

1/4 cup chia seeds

1/2 tsp ube extract

1-2 tbsp maple syrup

top with shredded coconut

Cacao Goji

1 cup almond milk

1/4 cup chia seeds

1/4 cup cacao powder

1-2 tbsp maple syrup

top with goji berries
