Baked Ube Donuts | How to Make Ube Donuts Recipe

Ingredients:

  • 2 cups all purpose flour
  • 1 cup sugar
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp kosher salt
  • 1 ¼ cups whole milk
  • 1 extra-large egg, lightly beaten
  • 2 tbsp unsalted butter, melted
  • 2 tsp ube extract

Ingredients for the glaze:

  • ½ cup powdered sugar
  • 1 tbsp water

Directions:

  1. Preheat the oven to 350°F.
  2. Put the all purpose flour in a large bowl, and follow it up with the sugar, baking powder, cinnamon, and salt. Whisk these ingredients together until fully combined.
  3. Next, we’ll combine the wet ingredients. In another large bowl, combine the whole milk, the beaten egg, the melted butter, and the ube extract. Whisk these well, and then pour this mixture into the bowl containing the dry mixture.
  4. Whisk the dry and wet ingredients together VERY well, and then pour this mixture into a pourable measuring cup.
  5. Oil your donut pan. I used coconut oil, but you can use oil or butter. Fill up each cavity in your donut pan to only ¾ full — these will rise. Place the filled pan in the preheated oven and bake for 20-25 minutes, or until the batter is fully baked.
  6. Once they are finished baking, allow the donuts to cool down completely. Be careful to not let them break when popping them out of their molds!

Your donuts must look beautiful! They’re pretty sweet, but if you would like a light drizzle (and I recommend a VERY light drizzle), this is how I made it:

Directions for icing:

  1. For light icing, whisk together ½ cup of powdered sugar with 1 tbsp of water until all clumps have dissolved. You can lightly drizzle your donuts with this consistency.
  2. For a THICKER glaze, add another ½ cup of powdered sugar and another 1 tsp of water.
  3. Gently dip your donut upside down on the glaze, and evenly spread the icing throughout the donut using a utensil.

These donuts are so photogenic! Enjoy these ube donuts with a cup of coffee or strong black tea. But always remember to moderate your sugar intake! Thanks for using this recipe! 🙂
